Ingredients

  • 240ml vegetable oil
  • 1 green Scotch bonnet chilli, chopped
  • 1 garlic clove, crushed
  • 1 medium whole chicken, seasoned and jointed
  • 120ml tomato ketchup
  • 1 tsp Worcestershire sauce
  • 1 tsp Chinese chili sauce
  • 250ml water
  • 1/2 tsp Jerk seasoning
  • 1 tbsp brown sugar
  • 1 1/2 tsp gravy browning
  • 250g canned mixed vegetables

Blue Mountain Stewed Chicken – Jamaica

Serves 4

 

Directions

1. Heat the vegetable oil in a deep frying pan or wok, add the chili and garlic and fry for about 1 minute, or until browned.

2. Remove the chili and garlic with a slotted spoon then add the chicken pieces to the oil.

3. Fry until golden brown then remove with a slotted spoon and drain on absorbent paper.

4. Meanwhile, combine the tomato ketchup, Worcestershire sauce, Chinese sauce, water, Jerk seasoning and sugar in a small pan.

5. Mix thoroughly then add the gravy browning to color.

6. Bring to a boil, reduce to a simmer then cover and cook until thickened (about 15 minutes).

7. Add the chicken pieces to the sauce and allow to simmer for 5 minutes.

8. Now add the mixed vegetables, chili and garlic and simmer for a further 5 minutes.
