Serves 4
1. Wash the salmon then pat dry.
2. Season with the salt and black pepper then set in a baking dish and sprinkle with the lemon juice and olive oil.
3. Spread the onion slices evenly over the top then cover and set aside to marinate for 60 minutes.
4. Discard the onion then arrange the fish on a grilling (broiling) pan.
5. Place on a hot grill and cook, turning once, until well browned on both sides and cooked through (about 16 minutes).
