Serves 4
1. Combine the cream of wheat, salt, nutmeg and cinnamon in a bowl then gradually add the bananas, eggs, water and oil.
2. Blend thoroughly to combine then turn the batter into a well-greased 1kg loaf tin.
3. Place in an oven pre-heated to 170°C and bake for about 45 minutes, or until the top is golden and a skewer inserted into the center of the cake emerges cleanly.
4. Allow to cool in the pan for 5 minutes then place on a wire rack and allow to cool completely before serving.
