Serves 6
1. Heat oil in a medium saucepan over medium heat.
2. Add onion and garlic.
3. Cook, stirring frequently, 5 minutes.
4. Add broth and bring to a boil.
5. Add remaining ingredients.
6. Reduce heat to medium-low, cover, and simmer 45 minutes, until rice is tender and most of the liquid has been absorbed.
7. Remove from heat and let stand covered, 5 minutes.
8. Fluff rice with a fork before serving.
