Olluquito con Carne – Peru
Serves 6
1. Soak the ollucos in salt water for one hour. Soak them after they are cut
2. In a large skillet, heat the oil and fry the beef until all the meat turns to a golden brown color. Once the meat is cooked to golden brown remove it from the skillet and put it aside.
3. Cook the onion and garlic in the fat left over in the skillet from the meat. Then add the paprika, aji paste, cumin, salt and oregano. Cook all the ingredients for 3 minutes.
4. Drain the ollucos and then add the onion mixture. Add the beef and cover the pan. Continue to cook the beef over low heat until the ollucos are tender. This should take roughly 15-20 minutes. Stir regularly.
5. Add parsley to the dish and mix it in.
6. This dish is served with white rice.
