Chicken Kelaguen (haole style)
Serves 4
1. Debone and chop up the entire chicken and place in a bowl
2. Roll lemons and limes on counter, cut in half and squeeze juice into a separate bowl
3. Dice onion and add to chicken
4. Season chicken with salt and pepper
5. Add lemon/lime juice until chicken is just moist – do not make liquid collect on bottom
