Ingredients

Spicy Lime Vinaigrette:

  • 1/4 cup fresh lime juice
  • 1/4 cup rice vinegar
  • 1/4 cup sugar
  • 1 tbsp fish sauce
  • 2 tsp  minced garlic
  • 1/2 tsp crushed red pepper flakes
  • 1/2 tsp salt
  • 7 oz stir-fry rice noodle
  • 1 medium cucumber, halved lengthwise, seeded and thinly sliced
  • 1 cup shredded carrots
  • 1/4 cup chopped fresh basil
  • 1/4 cup chopped fresh cilantro
  • 1/2 cup thin red onion slices

Serves 2-3

Directions

1. For the Vinaigrette, mix all ingredients in medium bowl. Set aside.

2. Bring large pot of water to boil. Add rice noodles; cook 3 to 5 minutes or until noodles are tender but firm. Rinse under cold water; drain well.

3. Place noodles in large bowl. Add remaining ingredients and Vinaigrette; toss gently. Serve immediately.
