1. Finely chop the courgettes and add to a pan with a little salted water. Bring to a boil and cook for about 10 minutes, or until tender. Drain and set aside to cool.
2. Repeat this cooking process with the broccoli, cauliflower, carrots and potatoes.
3. Dice the tomatoes and onions then core and dice the apples.
4. Mix all the ingredients (when cold) in a salad bowl and season to taste with salt, black pepper and mustard.
5. Dress with olive oil and vinegar.
6. Garnish with the olives and serve.
