1. Bring a pan of lightly-salted water to a boil. Add the maize kernels and cook for about 10 minutes, or until tender. Drain the maize and return to the pan with the cream and 600ml water. Bring to a boil, reduce to a simmer and cook gently.
2. In the meantime, melt the margarine in a frying pan. Add the onion and fry for about 5 minutes, or until lightly golden brown. Scatter over the flour and stir to combine then add two ladlesful of the stock from the maize kernels.
3. Pour this mixture into the corn mix. Stir to combine and cook until the stock has thickened.
4. Take off the heat and turn half the mixture into a blender or food processor. Process until smooth then return to the pan. Season with the salt, then allow the mixture to heat through.
5. Divide between warmed soup bowls and serve.
