Ingredients

  • 280g cornflour (cornstarch)
  • 1/4 tsp salt
  • 200g granulated sugar
  • 1 large egg
  • 1/4 tsp vanilla extract
  • 150g butter

Directions

1. Combine the cornflour, salt and sugar in a bowl. Add the egg and vanilla then stir until completely combined.

2. Add the butter and mix thoroughly with your fingertips until the mixture come together as a dough. Shape the dough into a ball, cover with clingfilm (plastic wrap) then set aside in the refrigerator to chill for at least 15 minutes.

3. After this time, divide the mixture into 3cm diameter balls. Set these balls at least 8cm apart on a greaseproof (waxed) paper lined baking tray.

4. Transfer to an oven pre-heated to 180°C and bake for between 5 and 7 minutes, or until lightly golden brown.

5. Allow to cool on the baking tray for 5 minutes then carefully transfer to a wire rack to cool completely. Store in an air-tight jar.
