Serves 8
1. Combine the onion, bell pepper, rice and garlic in a large pan with 250ml water.
2. Bring to a boil, reduce to a simmer and cook, stirring constantly, for 15 minutes.
3. Stir in the tomato purée, add the chorizo pieces and cook for 5 minutes.
4. Now add the carrots, peas, chopped tortilla and the coriander leaves.
5. Stir to combine, allow to heat through then season to taste with salt and serve.
