Serves 4
1. Add the water to a pan, bring to a boil, then add the rice to a steamer, place over the water then steam for about 20 minutes, or until tender.
2. When the rice is almost done, add the oil to a pan and use to fry the onion, garlic and bell pepper for about 5 minutes, or until just tender.
3. Stir in the steamed rice along with the sweetcorn and mixed vegetables.
4. Toss for a few minutes to heat through then add the cheese and the dry soup mix.
5. Toss thoroughly to combine, allow to heat through and serve.
