Serves 4
1. Wash and dry the chicken then combine the ground almonds, salt, pepper and paprika in a shallow dish and roll the chicken pieces in this mixture to coat.
2. Butter a baking dish then arrange the chicken pieces in a single layer.
3. Dot with butter (or margarine) then transfer to an oven pre-heated to 160°C and bake for about 40 minutes, or until cooked through.
4. Serve with baked and mashed yam or sweet potatoes and steamed vegetables.
