Cape-Verde
Serves 4
1. Gently fry the onions, tomatoes, spring onions and peppers in oil.
2. Cut the fish into small pieces and fry for a few minutes.
3. Cover with water and gently bring to a boil.
4. Add the white and sweet potatoes and parsley, then cover and reduce to a simmer until fully cooked.
