Serves 4
1. Dice the tomatoes and chilli, place in a bowl and season to taste then set aside to marinate for 10 minutes.
2. In the meantime, peel the grapefruit, separate into segments and cut each segment into two or three pieces.
3. Slice each avocado in half and remove the stones.
4. Carefully remove the flesh with a spoon (be careful to leave the skins intact) then dice the flesh.
5. Add the avocado flesh and the grapefruit pieces to the tomato mixture.
6. Pour over the lemon juice and stir to combine. Cover and refrigerate to chill for 30 minutes.
