Ingredients

  • 500g cooked rice
  • 12 fresh, large, prawns, peeled and de-veined
  • 3 onions, diced
  • 2 tomatoes, diced
  • 2 tsp finely-chopped garlic
  • 2 eggs, beaten, salted, fried as an omelet and cut into wedges
  • 250ml vegetable oil, for frying
  • 2 tbsp vegetable oil
  • 1 tbsp shrimp sauce
  • 1 tsp sugar
  • 1 tsp bouillon sauce

Directions

1. Heat the oil in a pan, add the salted egg omelet pieces and fry for 4 minutes then remove with a slotted spoon and set aside.

2. Pour off all but 4 tbsp of the oil, add the garlic and fry for about 3 minutes or until browned.

3. Add the prawns and stir-fry for 2 minutes then pour in the rice and stir-fry for 4 minutes more.

4. Add the vegetables and stir into the rice.

5. Stir-fry for about 2 minutes, or until warmed through.

6. In a small bowl, whisk together the 2 tbsp vegetable oil, shrimp sauce, sugar and bouillon sauce to form a dressing.

7. Arrange the fried omelet slices on a plate then spoon over the rice mixture.

8. Drizzle over the dressing and serve garnished with slices of cucumber, tomatoes and lemon.
