Mali
Serves 4-6
1. Peel the mango cut into strips between 1cm and 2cm thick.
2. Melt the butter in a frying pan or skillet.
3. Add the mango pieces and fry for about 5 minutes, turning the pieces occasionally so that they fry and colour evenly.
4. Remove the fruit from the pan and add the sugar.
5. Heat until the sugar has dissolved then return the fruit to the pan.
6. Turn until evenly coated in the sugar.
7. Take off the heat and arrange the fruit on a plate.
8. Drizzle over any left-over syrup then allow to cool.
9. Refrigerate for at least 2 hours before serving.
