Ingredients

  • 500g dried, salted, fish
  • 3 large yellow onions, finely chopped
  • 20 okra pods, par-boiled
  • 1l cold water
  • 3 fresh red chillies, pounded to a paste
  • 6 tbsp oil
  • 4 tomatoes, diced

Directions

1. Soak the fish overnight in water.

2. Drain off this water the following day, remove any bones then add the fish to a large pan with 750ml water.

3. Bring to a boil then reduce to a simmer.

4. Heat the oil in a frying pan and fry half the onions and chillies until golden.

5. Add the tomatoes and cook for 3 minutes before adding the final 250ml of water.

6. Simmer slowly for 15 minutes.

7. Pound the remaining onion and okra to a paste in a pestle and mortar then add to the fish.

8. Stir in and allow to simmer for 25 minutes.

9. Combine the fried ingredients with the fish and cook for a further 5 minutes.
