Ingredients

  • 6 tbsp milk
  • 3 tbsp active dry yeast
  • 1 tbsp baking powder
  • 6 tbsp cold water
  • 400g millet flour
  • Vegetable oil for frying
  • 1 tbsp caster sugar
  • 400g brown rice flour
  • Icing sugar for dusting

Directions

1. Combine the milk and water in a small pan and gently heat.

2. Pour this mixture into a bowl and add the caster sugar.

3. Add the yeast and place in a warm spot until the yeast begins to froth.

4. Sift the millet flour, rice flour and baking powder together in a large bowl.

5. Add the yeast mixture and mix. Allow to stand in a warm place for some 40 minutes until risen.

6. The mixture should have the consistency of a thick pancake batter by this point.

7. Add the vegetable oil to a frying pan or wok so that it’s about 3 cm deep.

8. Heat on low heat for about 5 minutes then add spoonfuls of the batter and cook for 5 minutes, turning frequently to prevent burning.

9. Drain on paper towels, dust with icing sugar and keep warm.
