Serves 6
1. Heat the oil in a deep fryer or a wok to about 180°C.
2. Sift the flour and baking powder into a bowl then stir in the sugar.
3. Work in enough water to give a soft but not sticky dough.
4. Turn out onto a floured work surface and knead until smooth and elastic.
5. Shape the resultant dough into balls then drop in the hot oil and fry for 4 minutes, or until golden brown all over and cooked through.
6. Drain on kitchen paper, dust with vanilla sugar and serve.
