Serves 4
1. Wash the beans, place in a large bowl, cover with plenty of water and set aside to soak over night.
2. Drain and wash the beans then combine in pot with the water.
3. Bring to a boil over medium-high heat then cover and reduce to a simmer.
4. Cover and cook for 20 minutes, then add the onion, garlic and red palm oil.
5. Cover and cook for 15 minutes more, or until the beans are tender.
6. In the meantime, peel the plantains and cut at a bias into slices.
7. Place in a bowl, pour over enough water to cover and add a little salt.
8. Set aside to soak for about 10 minutes.
9. Drain the plantains.
10. Add vegetable oil to a depth of 1cm in a deep frying pan.
11. When hot, add the plantain slices and fry until the plantain pieces are golden brown on both sides.
12. Serve the bean sauce in a bowl, top with the fried plantains and accompany with plain boiled rice.
