Serves 4
1. Heat the oil in a pan or wok until almost smoking then add the pork and salt.
2. Stir-fry until the meat has browned then add the coconut milk and bring to a boil over medium heat.
3. Add the rice, lower to a simmer, cover and cook for 15 minutes.
4. Stir occasionally and add a little water if the rice begins to stick. Serve immediately.
