Gari foto – Benin
Serves 4-6
1. Beat 4 of the eggs in a bowl.
2. Season to taste and make an omelette.
3. Set aside to keep warm.
4. Heat a little oil in a pan, add the tomato pieces and fry along with the onions and tomato purée for 3 minutes.
5. Beat 2 eggs in a bowl and stir into the fried mixture.
6. Moisten the gari with 150ml water, stirring vigorously.
7. Pour the tomato sauce over the moistened gari and stir to mix.
8. Serve accompanied by the sliced omelette.
