Serves 4-5
1. Make the pastry and divide into 2 portions, one slightly larger than the other.
2. Line the inside of a square 9 x 2 x 1½ inch baking pan with the larger pastry portion.
3. Mix all the other ingredients into a dropping consistency. Add the caramel to give a light brown colour.
4. Pour into the lined baking pan ad cover with the rest of the pastry.
5. Brush with egg, prick and bake in a moderate oven for about 1 hour.
